Ingredients:
- 2 15 oz cans stewed tomatoes
- 6oz can tomato paste
- 1/2 stick butter
- 1/2 cup flour
- salt
- sugar
- 9" pie crust
- Bread Crumbs
Instructions:
- Melt butter in a pan and add the flour. Stir until the flour is cooked and everything looks brownish.
- Add in all the tomatoes and stir until mixed. Mixture should be fairly thick.
- Mash any large tomatoes into bite size pieces.
- Season to taste with salt and sugar. Canned tomatoes can vary quite a bit so this is important. It should be somewhat sweet and not bitter.
- Place pie crust into pie pan and add tomato filling.
- Cover liberally with breadcrumbs.
- Bake in a 375 degree oven for about 15 minutes or until crust is done and the breadcrumbs are browning.
